Our store's commitment

Rice
All of our rice is locally grown in Shiga. We source it directly from farmers through contracts.

Salmon
Our most popular salmon is shipped directly from Hokkaido. Every morning, we slowly roast a large half-cut salmon in a convection oven at 200°C for an hour. Once it’s perfectly golden brown, our staff carefully flakes it by hand.

Pickled egg yolk in soy sauce
After being frozen for two days, separate the yolk from the egg white. Marinate the yolk in a mixture of soy sauce and dashi for about four hours, allowing the flavors to fully infuse.

Spicy cod roe (Karashi Mentaiko)
We purchase fresh, plump cod roe directly from the fishing port, and our chefs carefully prepare it into mentaiko, perfect for rice balls. No unnecessary coloring agents are used.

Salmon roe
We use “Special 3A” Hokkaido natural salmon roe. We place it on the rice ball without wasting a single grain.

Miso soup
The miso soup is made with kelp and bonito stock and features miso lovingly handcrafted by a farmer’s grandmother.
